An Introduction to Parsi Cuisine

Parsis are the people who emigrated from Persia (Pars) to India, 1300 years ago and follow one of the world's oldest religions, Zoroastrianism, that originated 3000 years ago. On migrating to India, they were given refuge on the condition that they integrate and adopt the Hindu customs and traditions of the land. Today, Parsis, though a minuscule community, have spread out worldwide but have retained their strong cultural identity and inherent love of cooking delicious, hearty meals. Thus Parsi cuisine incorporates various elements of Middle-eastern, Indian and Hindu cuisines. 

The use of dried fruits and nuts, coconut, freshly-ground spices, yogurt, cane sugar and vinegar, results in a delicate balance between sweet, sour and spicy flavors.  Rosewater, saffron, cardamom and nuts are used liberally in many of our desserts.
